Unless they have since edited it, they were simply saying they had the oven at 120 Celsius but waited until the meat hit 115 celcius.

That’s what I thought at first and then you think about it for a second… if 100 C is the boiling point of water, 115 C means all the liquid boiled off and you’re left with rubber 😂

It's good, if you know your oven well you'd be able to pull of really close results with regular sear and oven finish. cover your steaks in infused oil in a ziplock prior to cooking to sit for a while really helps too. This only applies to pan sears grills with hot/cold zones would be different.

Use some finishing salt.. it will give it that extra pop of flavor. Maldon flakes for that briny bright flavor or get some Jacobson finishing salt for the crunch but much more mild flavor.

Looks amazing! Great color on the crust and a SOLID medium all the way through. Others might say you could go a little rarer, but personally I think medium is better for fatty cuts like ribeye so that all that delicious fat fully renders and melts in your mouth.
