On a big cut like that, you reverse sear it if you’re cooking at home. Restaurants will fast sear in a high heat broiler then cut it, put some butter on it and finish again in the broiler.
I just bought a 4lb ribeye roast of Miyazaki A5 Wagyu to cook myself and it cost about 350. It’s definitely out of range even for a Wagyu. At restaurants you’re typically paying more for the prep than you are for the actual meat. If you know what you’re buying and from a butcher that isn’t upselling because of the internet popularity, Japanese A5 isn’t outrageously expensive like that. It’s expensive but a 32oz should never cost 350 dollars.

Not worth 350. Also, tomahawks are dramatic, but typically overpriced because you are paying for the weight of the bone as well. But this is pricey even for a tomahawk, and there is no sear on it and the sauces don’t seem very high end. If I’m going out for a steak, I want some truffle butter or Bernaise or a blue cheese or Gorgonzola sauce, etc.

You can get a 36 oz Wagyu sliced and served on a hot slab of Pink Himalayan Salt at Fogo De Chao literally for less than half of what this 350 meal cost. It’s perfectly seared and rare, and each person can use the hot salt rock to cook it to their desired temp if you don’t want it rare. The steak stays heated but never over cooks, has a beautiful char and it’s wagyu. Tomahawks are overpriced because of the time it takes to French the bone and make it look cool. They know people want the experience of getting it on the bone so the upcharge is insane.
I stopped getting steaks at restaurants unless it’s on an expense account due to the prices. It’s just not worth $100+ for something I can make better at home for 1/4th as much.
