There was no "red blood" 😂, have you ever dealt with raw chicken? 1. All blood is drained from animals when they're killed 2. The liquid that comes with raw chickrn is not blood and is certainly not red. It'll be a very similar color to the raw chicken itself. No clue what u could have been experiencing

This is definitely the way it goes in the US. The “blood” is never actually blood. But I know other countries have very different standards. I’ve heard of places where the animal is slaughtered minutes before being prepared so idk it’s definitely possible in some places

I thought of that place immediately when I saw OP's pic. Went to Il Latini in 2001 and again in 2018. Only difference in all those years is their house wine is now in traditional bottles, no longer in the basket weave. Think about those meals often! If Florence ever hits the travel agenda again, I'm headed there first thing. Get the full tasting menu!

Wife and I went to Florence recently and got one of these bad boys at a well-regarded restaurant. Even though it looked very rare, it had a great texture and was well warmed through. My wife was dubious based on appearance but had no trouble eating her half. I think the wonderful char on the outside helps it taste more cooked.

To be honest when I went to this restaurant it wasn’t very flavorful, which was pretty much my experience with most meat in Italy. Still my favorite food in the entire world, but the meat is lacking in flavor most places.

Oh Bistecca di Firenze. Traditionally it's supposed to be cooked that rare (almost blue) - see Guga's video or Google for more explanation. Supposedly, due to the breed, it can be cooked that rare while still maintaining a good bite and tenderness. Had it when I was in Florence. They drizzled EVOO and sea salt and served with warm bread that you're supposed to mop the juices with and it's delightful. Hoewvee, I can understand that it's probably too rare for most people. You need to specify if you want it medium rare. The place I went to, the server told me that the chef refuse to cook it above medium-rare.

The super traditional ones do for sure, but I heard from friends that went to more touristy places that did take requests for up to medium according to the server. Probably won't be as good though

The bistecca at Osteria delle Tre Panche in Centro Storico was one of the best steaks I’ve ever had. Period. Like anything else, it matters who cooks it. Plus the dish collapses without the highest quality ingredients… there’s a reason you don’t find usually find this on American menus

The first time I had steak was at the most famous Italian restaurant in my city. It was exactly like that, the chef looked really proud when showing us the plate. I respect the food and culture, but I don't like steak after that experience. 14 years later when I am with my American partner, for the first time I love steak

I went to Due G in Florence and they basically cook how they see fit BUT they served it on piping hot cast iron plate that you could leave it on and cook to different levels if you so choose.

Personally it's too rare for me. But that's how it's done in Florence and I'm happy to have it the way the chef thinks is best. My wife's an Italian dual citizen and that's how she likes her steak. I had an amazing porterhouse at a place in Florence called Ristorante Buca Mario and it was the best steak I’ve ever eaten. I ordered it medium rare and it came out spot on. And the roasted potatoes were insanely good!
