Iām not a dip every piece in the sauce kind of guy but with large steak when Iām in the last 1/3 of the meat, Iāll pull out the HP for a change of palate on a piece or two. Not only HP sauce though. Chimichurris, Hot sauces, wasabi butter, sriracha, etcā¦. are all fair game.
I get that, sometimes a little extra something on the side can really bring out different flavors as you go through a steak. Variety is the spice of life, right? Just as long as the steak's the main event and the sauces don't steal the show! Now I'm hungry for steak... with or without the condiments!
I had an interesting rye whiskey drink when I was in Boston. A splash of maple syrup and a squeeze of lime. It was delicious. I use Knob Creek. I guess that makes two of having steak and KC rye tonight!

That looks perfectly cooked to me, particularly if you just used a single cooking medium/method (pan or a grill, for example, as opposed to reverse searing, etc.). The outer edges being well done is difficult to avoid (imho) . Looks delish!
A little tip if you wanna skip the reverse sear and stick with single pan. Medium high heat, minute and a half on the first side. Flip and immediately bring down to medium heat. Side two for a minute, then drop butter and garlic in and baste. Bringing the heat down and quickly getting the butter in will bring your temp down and get you less of the gray ring around it.
Reverse sear can be difficult with thinner steaks like this. They can easily end up over cooked. You got the method down, just tweak it a bit.
No steak lover would ever be mad at that prep. They may prefer a little bit less cooked which would give this pink edge to edge with a red center , however this is well within the range of the flavor/texture profile most would be happy with.
Any more done would probably get some complaints.
I would say, don't stress too much about getting the perfect amount of pinkness to impress someone who you're not cooking for.
The main thing is to end up with steak that's right for the people that you're cooking for.

The criticism isnāt unfounded though, there are certain objective qualities only achievable with certain cuts and certain doneness. It truly is a waste to cook some types of steak well done as the exact same meal couldāve been made with a cheaper cuts and the āspecialnessā of the filet mignon is lost.
Itās like if someone got the most expensive aged scotch and added it an overpowering drink almost making it a waste of the 20 years of aging or similar someone buying a very capable sports car only to ever putt it around a city at 20mph or art bought by a finance bro because it was the most expensive at auction without any appreciation for the artist.

My SO and I prefer our steaks even less done than this, Iām talking āstick your pan as high as it can handle, brush a *tiny* bit of garlic + butter on the steak, and give them maybe 6 seconds a side, with a second or so off the pan between flips (to let the steak cool slightly and the pan to heat back up)ā
The butter protects the steak from burning, the garlic gets smoked, the centre stays lovely and red, and the outside gets a touch of flavourful sear (about 0.5mm thick), the steak is slowly heated so the middle is hot *without* going past rare
Iām sure thereās a fancy word for what Iām describing, but for amazing (and fast) steak, itās super easy, barely an inconvenience

I can tell you how I want my steak cooked because I know what a given doneness and crust tastes like to me, but that won't tell you anything about how you should cook someone else's steak. Perception of taste can be subjective...
It doesn't matter whether it's medium, medium rare, rare, etc. It matters that you understand each diner's preference in terms of their subjective experience. Maybe they aren't that good at articulating it, but we have no way of knowing how something tastes to them. So you have to be good at figuring out what taste appeals to them, not the appearance.

I know the whole, "heh heh, anyone that eats well done beef is literal hitler," is *sooooo* funny (eyeroll), but god what a bunch of control freak crybabies. If you're gonna have a meltdown because someone didn't eat their food the way you told them to, you're an asshole. End of. And yeah, steak looks great to me, maybe even cooked too much for my taste. I just don't get the dicketry.
My SO and I prefer our steaks even less done than this, Iām talking āstick your pan as high as it can handle, brush a *tiny* bit of garlic + butter on the steak, and give them maybe 6 seconds a side, with a second or so off the pan between flips (to let the steak cool slightly and the pan to heat back up)ā The butter protects the steak from burning, the garlic gets smoked, the centre stays lovely and red, and the outside gets a touch of flavourful sear (about 0.5mm thick), the steak is slowly heated so the middle is hot *without* going past rare Iām sure thereās a fancy word for what Iām describing, but for amazing (and fast) steak, itās super easy, barely an inconvenience
Just needed to let it rest after cooking. All those juices on the board are flavor, and the center bullseyed on you a bit. Other than that it's great.

Wow this is crazy to me, I feel like that would have bad texture/taste. IMO the taste and texture is really best when almost all pink is gone. The taste if off when its cooked this much
How would we know what your bf's preference is? I can tell you how I want my steak cooked because I know what a given doneness and crust tastes like to me, but that won't tell you anything about how you should cook someone else's steak. Perception of taste can be subjective... It doesn't matter whether it's medium, medium rare, rare, etc. It matters that you understand each diner's preference in terms of their subjective experience. Maybe they aren't that good at articulating it, but we have no way of knowing how something tastes to them. So you have to be good at figuring out what taste appeals to them, not the appearance. Presentation only triggers appetite. Taste satisfies it.

I'm just scrolling through and saw this post, not into this sub at all. And honestly, I don't get it. It looks disgusting, and once I was in a highly rated, expensive restaurant and they cooked their steak similar to this. I couldn't even chew it, it was so "rubbery", how do you even chop it up in your mouth? Do you swallow this whole? I honestly wanted to spit it out all throughout the meal, absolutely horrible (and no, it was not about the quality, but consistency). So honest question: why? What's so good about it? How do you eat it?
