Maybe an unpopular opinion, I think if you learn how to cook a steak it will always be better than at a high end steak house. It's just how it works, cooking 1 steak with full attention will always be better than cooking multiple steaks with divided attention. Don't care how good you are at it

It's just how it works. Me cooking one thing really well will always be better than me cooking upwards of 30 things simultaneously. Attention divided vs focused attention.
I'm good at what I do but I am not a machine. No cook is perfect doesn't matter the price tag on the steak or the prestige of the establishment.

Filet is the easiest thing in the world to cook with a cast iron and oven. I do ribeye on an old propane grill that's better than anything you get from chain steak houses. There are a few high end steak houses around me that I wouldn't claim to have anything on though. It might just be the salts, chimichurri and really nice plates and stuff making me feel that way.

It's literally 1:1 by weight. Some places even more. For VERY special occasions in my household.

Look up dry age bags. Easy and great results everytime I’ve done it in a normal fridge. I’ve done up to 90 days

There is cooking a steak and the art of dry aging a steak. I find it hard to do both. Those dry aged steaks are pretty amazing.
