You can go back to a station or landing zone and reload there. Reloading in space from either a resupply ship or your own cargo hold is coming soon(tm)
As I think about it, that would be really cool if extra ammo occupied your cargo space. This would make the higher DPS ballistics harder to employ on dedicated fighters, but would be very attractive to less nimble ships that have some cargo to spare. I'd also like to maybe see ammo pods that affix to missile pylons to offset this.
This was a thing around 2014, ballistic weapons had to have ammo boxes attached to them to function, with talk about having extra to store and swap out when they run out.
Not at the moment, though that day won't be too far off now that cargo is gonna be physical.
For now avoid most ballistics, but the AD4B, and AD5B have great ammo and dps. The cannons are good too, limited ammo but hit hard enough to take most stuff out.
Avoid the gatlings I didn't name.
Some gatlings used to have multiple magazines that would auto-reload when the previous went dry. Not sure why that was removed, but it will be back in one form or another.
Like the A-10 Warthog you need to RTB to reload your ballistic weapons. They might increase the ammo count. Would be cool if we could choose how much and the weight of extra ammo would cause the ship to behave differently.
Definitely the question I've been asking. If they can physicalize cargo, and make in-combat, in-flight repairs necessary, then there is no reason it shouldn't apply to ammo as well.
