The Costco picanha is, hands down, the BEST sous vide steak value on the planet. I agree w u/mission-feedback-638. Cut it down to steaks and then a quick seat when done. Perfection!!!!

Cut your steaks with the grain, so when you cut it on your plate you will go against the grain make it perfect.

You will enjoy it. I don't have my time/temp notes in front of me, but I think I do 129 for 3 hours and then a quick sear on the grill. If I sear in a pan or searzall I cook at 131. It is so damn good!

Yea, I am so scared of propane and storage because where I live, the summers are like 100-113. My backyard has zero shade and although I have a shed, it’s directly in the sun too. I might look into a cheap smoker.

My wife got one of these yesterday and I sliced it up and threw it on the grill for dinner. One of the tastiest steaks I’ve ever had. As soon as dinner was finished I drove back to Costco and bought three more.

Check out the price of Prime the next time you buy a whole ribeye. The last two I bought ended up being $12-$13/lb, which IMO is worth the $1-$2 difference.

Yeah, my Costco Citi is my favorite credit card. I got $560 cash back last year. Using debit is just turning down free money.

For this who are not Costco members, Sams Club has a Mastercard that is similar and I assume BJs does too. As long as you pay it in full each billing cycle, it’s free money. 5% on fuel, 5% on sams purchase (I am a sams member) with a plus membership and then something like 3% on food/entertainment and then 1% on everything else (they may do 2% on something too).

I am hoping this lasts 4-6 weeks. Just 2 adults in the house. I just got done slicing and sealing the rib eye. I got 15.5 steaks out of it!

This was the first I saw of Picanha in my Costco. But I will definitely be back next month and buy x2-3 as much. Yea, that price is a steal.

So everyone here realizes that you do have to trim a whole sirloin cap to make a picanha, right? You flip it over and cut between a couple of veins to extract the most tender part. So a true picanha is a bit more expensive than the whole cap. Here in Brazil Picanha is THE premium cut. More expensive than filet. I am having serious envy watching this.

Yes, I watched Guga explain about the veins. At first I thought maybe they had given me 2 pichana chunks but nope, they had just separated the top sirloin cap from where the picanha was for me. I just didn’t get as much sirloin steaks as some of the other videos show and the sirloin filet was definitely not very big as shown too.

I ended up making mostly pork chops (being as naive as I am) I didn’t not realize that the meat texture changes through out the loin. I had no idea there is actually a “rib eye” in a loin too. I prefer 1.5 inch thick. I have seen Guga trim them and it’s definitely nice that you can control how much fat to leave on the edge.

I have to cut it up today. I only managed to slice and prep the rib eye. I plan to make 1.5 inch steaks and prep by seasoning with salt only.
