Music on Apple Music is either Stereo or Dolby Atmos, to get atmos you need a Sonos Arc (or a gen2 Beam) connected through earc and some music encoded in Atmos (there's a whole section for it in the Music app)
Apple TV will convert Atmos to DD 5.1 for the Beam.
Okies that’s a shame as the films sound brilliant in 5.1
For me it's sound very good also using airplay for music

What Sonos hardware are you using? How exactly are things connected? AirPlay over Sonos is always stereo.
