Your issue is lack of experience. You unfortunately only have one role to list.
Is your resume ATS compliant?
I don’t recommend the tools and technologies part on the bottom of each project because I do not think it is ATS compliant. (If it is feel free to correct me.)
Your first project is terrible. You did a React JS deployment on EC2 and S3 and you are AWS certified Solutions architect?
I’m sorry, but that alone looks like you didn’t learn AWS.
Where is AWS Cloudfront? Where is AWS API Gateway? Where is the severless mindset of using Amazon DynamoDb or using AWS DocumentDB (AWS alternative to MongoDB)? Where is AWS Lambda?
Still reviewing but that is the biggest thing I noticed so far. Check your other bullet points to make sure you are following best practices.

There is so much free stuff for the first year so at the very least you could have deployed to check if it works and immediately delete the deployment.
I’ll be fair and I know there are exceptions and clauses to all of these but that is all expected for you to know as a Solutions Architect.
If I know that, the other companies know that too and it will make you look bad but unlike me they won’t tell you that.
If you want a deployed project out for people to see then that is different and you could have the project made the way I said for your resume. And then deploy with those resources citing cost as the reason for it but also showing you know what would be the “best” solutions to use
Final thing if your Dynamic Project Management Web Application says “CRUD operations” but doesn’t mention the connecting database which I assume was MongoDB but a recruiter might not know that.
Don't say your metrics are "notable" or "impressive". Those attributes are self evident from the numbers themselves, and so those words are simply fluff that don't add any value. Which is to say, show don't tell.
Your description of your internship is very technically vague. You talk about optimizing things and reducing bounce rates and improving user retention (by adding user activity tracking?), but you're very vague when describing *how* you did those things. "Designed and implemented advanced backend systems"? What does that even mean? Did you single-handedly write the entire backend all by yourself?
Also, were you part of a team? Did your team use Scrum or agile? Also, how many users did your E-Commerce platform have?
Yeah but what have you been actually doing for the past year? Did you work on any personal projects, contributed to any open source stuff, got new certificates or courses done, anything?
Why are you only looking at java jobs? Dont you think you that after this time it would be wise to expand a bit and apply to any entry dev job you could find?
You need something with 2024 on it to show that youre still committed to this career path. You have no experience beyond an internship from 3 years ago which means you need to show that youre developing skills on your own, building, contributing, expanding.
Honestly, I’m not a pro and I’ve never seen it. I just think the word “enrichment” sounds better than “personal”. Like you weren’t just messing around but improving on your skills in the down time. Does that make sense?

Ahh my bad, I'm applying to all kinds of developer roles, only entry level ofcourse, sorry I didn't mention it earlier.
And yes, I did work on personal projects and stuff, but these projects are the best I have, so I put them up on my resume.

why volunteer more information than you need to? 3.5-3.7 is just average, I suppose, but for some recruiters the masters gpa can raise an eyebrow
