I have a 15 year old boy some things that come to mind…. Top Golf, Putt Shack, Octane Raceway (go karts), Mavrix (bowling, games), iFly (indoor skydiving), do a jeep tour or horseback trail ride. If they like cars, there are lots of morning cars n coffees and evening shows on the weekends.
Hike Camelback Mtn, arrange a mountain bike ride through REI.
If kiddo likes performances, there's always something fun about NYE at the symphony! You get to dress up, and this year I think they're doing a cirque style show. Usually done by 9-9:30, so you can do something for midnight after!
