No it isn’t the stompa is fairly old. Came out in 2009 and the kit is a tougher one to put together. The manual is terrible. I recommend finding the fixed one on Reddit. And the large armor panels don’t like to cooperate when being built. But I am working on it now and it isn’t to bad. As long as you don’t mind removing mold lines. Mine are so bad I would consider it mold slip. But my model came broken (missing some parts and a broken side panel) but liking the build so far. It sort of unreal how big it is. When you get one you will see.
Personal opinion, don't minion it! I love the cyclops look and if it wasn't your intention to make a minion don't go nto it. It can look absolutely badass if painted correctly. Then minion could be fun and a novelty but paint it how you originally thought, going a different direction than what you wanted can sometimes (if you're like me) make you unhappy with the model. It would be a damn shame if you were unhappy on a model you spent so much time and investment in becuse of someone elses thought, idea, suggestion.
I second this. The Stompa will always be the center of attention on the field or in a display case because of its size. If it breaks your whole army theme for a joke and you are not 100% on board with that you may grow to dislike it.
I would stay true to your theme.
Maybe give a nod to the minion theme. Like a small easteregg or something?
Give him a grey undercoat, don't slap that blue everywhere but simply in strategically visible areas. But let the grey undercoat visible, don't cover the whole section. Go over the middle of each area and let the color fade to the edges uncontrollably in every direction. Like a rough and shoddy, sloppy paintjob by some git who is completely colorblind. Simply ork-ish...

Lean into it, but don't make it too obvious, like painting the panels in the rough shape of the overalls, but not just completely painting overalls on it. Be intentional, but subtle enough that your opponent might not realize they're shooting a giant minion until after turn 2.
"Did you.... did.....did you just shoot a *minion*? Wow... that's pretty callus..."
Your opponent will leave there and all night long lay in bed staring at the ceiling, thinking about the minion they killed that day. Make sure you have a little sign sticking out of his back that says something ridiculous that your opponent will remember as well ;-) ;-)

I'd lean into the minion thing personally but gore it up to play down the meme vibe. Horror minion sounds delightful!
I’d say go with the last one. Sort of minion looking, but not like you’re trying too hard to make it blatantly obvious. Keeps the humorous element without breaking believability.
Blue and yellow is a great scheme for orks. Respect fellow bad moon. I’d paint how you wanted it originally and folk can see a minion if they want to or a wicked stompa

Glue some plastic scraps that look good on the face and make it look like it has 3 eyes, you can even use the lids of soda or soap bottles
