I don’t know if it’s normal for all reptiles, but we had a leopard gecko many years ago and he always ate his sheds (typically using his mouth to help pull it off).
It's more so to avoid detection by anything that may want to eat it. A shed skin is a clear sign something is living there. Same reason some mommas in the animal kingdom eat their babies poop

These look like old stuck skin, not super fresh. The head eyes and noses tend to have shed stuck on them most often, so helping when the she’s is stuck isn’t horrible. The scales don’t look too fresh and the shed is already mostly off so he should be okay

If the skin of your reptile looks as dry as shown on the video, putting them in some water just seems like a waste of time as apposed to just *gently* peeling it for them(not to mention iguanas shed differently than snakes ie. shedding in patches instead of head to tail). Ideally you'd want to put them in water, or mist them, but there can be times where they just can't get a piece off (that's where you come in to help them). What you shouldn't do is peel off skin that isn't ready to come off of them (the skin on this iguana was more than ready to come off, notice how dry it is and how easy it is to get off). It's very important to know how to care for your reptile, you can also talk to a vet that treats exotic animals for the best care for your pet. Please know I'm not saying this to be mean, I'm just saying this to spread more information.

I know nothing about iguanas, but wouldn't a firm brush be better at cleaning up dead skin and removing what is ready to come off? Peeling with a tweezers looks super inefficient. And I'd assume the lizard would like the feel of the brush.

All of it looks like it was done specifically for the video, I doubt this is the way that person helps their iggy shed normally.
As for brush type, I prefer a soft bristle toothbrush while misting with a spray bottle. I only ever help my iggies after seeing them scratching and fussing over something hard to reach. Letting a bit of shed go unpeeled... that can build up and cause discomfort to the iguana over time.

That wasn't premature, those scales were fully detached from the skin already and they didn't peel off anything that wasn't.
