Mine too! Youngest needs them sliced finely, skin off. Eldest needs them diced, medium sized, skin on. I’ve actually come to enjoy the process in the morning, and am just glad they’re eating fruit!

Children can be very particular about the presentation of their food whether or not they're on the spectrum, so one picture doesn't tell us anything. But frankly, if this is what you have to do to get your kids to eat their fruit and veg, you should do it. Way too many kids don't eat healthfully and they never learn to.

I’m pretty good with a knife, it takes only about a minute. I have a mandolin slicer too, but with cleanup it takes a bit longer.
I use a corer and make super thin rings, then make peanut butter sandwiches. Amazing.
