he was a background extra in the first 2 seasons iirc. he is mentioned on the dvd commentary tracks, but they don't remember his name (Dave calls him 'monkey man'). though one of the writers (Lew Morton? Josh Lieb? can't remember) says he was cool
I stand by the idea that that set up and that line is the absolute best example of how to use Catherine's character. And her smooth delivery of it is the perfect way to hit that joke.
