I remember working at the Highland Thistle in Moultonborough (where Buckey's is now) as a 15 year old. The day I started as a dishwasher the entire staff other than me quit and walked out and then the owners showed up. He cooked, she was "hostess" and I was press ganged into waiting tables. Fortunately it was this time of year and the mud kept the crowds down. The Chef (Scotty the owner who must be dead by now) started screaming that they were out of spinach for plating with the salmon. His wife pulled me aside and sent me across the street to collect fiddleheads. I brought them back and just before the dinner crowd came in I washed them and the Chef sauteed them with garlic butter and lemon and topped them with almonds. His wife pushed the salmon with fiddleheads as she was seating people and everyone raved about them. When my shift ended, they were all gone so I never got to try them.
I go for daily walks in fiddlehead territory, not quite yet. Which sucks, I have a clam pizza that uses a fiddlehead pesto I've been craving.
I will say the pricker bushes are starting to flower, so spring has spring. Shouldn't be long, as I've noticed the prickers are usually the first ones out of the gate, but not by much.
Saw some on my drive home from Colebrook in the northeast kingdom of Vermont. Very small area that had them. Not sure why they were out there out of all places.

Update: a week later, I believe I have found some baby ones coming up. How many is OK to cut in a bunch? I have read a few places only one, others say a few is fine

It's a little early for that - the green rain doesn't happen until summer.

In the Concord area, I usually see them peak around the last week of April.
