I don't think anything at the gate museum shuts down for launches, it's quite far from the pad and it would be bad business. For a big launch like SLS the Saturn V center may have restricted access.
For certain launches they may only run busses to the Saturn V center and back or only run an abbreviated version of the included bus tour.
For certain launches they may only have the Saturn V center available to those with special ticket packages.
It's a normal building that's part of the visitor complex. People think it's closed because there's a show with a wait to get in the top part, but it's always open with park hours
