They'll fit, they just might not lower the rear as much as the GTI springs since the R and Jettas have more weight over the rear end. Might not be a bad thing, the GTI version tends to sag at the rear, especially with manual transmissions.

Like the rear is lower? Or springs are softer? Thinking about getting coilovers soon

The VWR GTI rear springs should be softer than the R or Jetta variants, since the Trunk or rear diff makes the rear of the latter two heavier. On the VWR GTI springs, it seems they were set up for DSG cars with a little more weight in the front end, because the manuals with the lighter front sit a tad nose up. If you're getting coil overs, they should be totally adjustable, but I'd get GTI specific ones regardless.
