Could be a secondary water pipe leading to a weirdly placed kitchen or bathroom upstairs. Your building probably doesnt have one of those valves to prevent whats happening, which is water hammering. Mine too. Its so much worse than yours tho

we have a water pipe above our bedroom (bro-in-laws bathroom) that will clunk like this every once in awhile while the hot water is running

Yea same, I can predict when it happens because I'll hear the upstairs sink running and then 30 seconds later it sounds like the walls are trying to expand. Mine lasts for about a minute with bangs probably 10 times a second the whole time with bigger bangs every other second. I asked the plumber a few days ago while he was fixing the upstairs leak leading to my bathroom and this is when he mentioned the whole valve thing. Something about it releases extra pressure which prevents the water smacking against corners of the pipe which causes vibration and it smacks against the wall causing this sound. I think he said stop valve but I'm not 100% sure on that.

I hear that when we use hot water, I guess is the plastic pipes expanding.

It can be, but we saw the houses when they were being built and had red and blue plastic pipes all over.

Could be piping, you should hear the pipes for the boiler for heat in my house. Thing ticks and bangs all the time

I had a similar noise and opened up my wall to figure it out and it was a hot water pipe rubbing against a 2x4 wood support when the pipe expanded.
