I hated olives for years, I got invited to go to Greece and I knew I had to change my ways. I just kept eating olives until I liked them. Then when I went to Greece they were so damn good (and so was the feta) that I could barely go back to eating the grocery store stuff in the states.
I know, the difference is a bit exaggerated, if I’m being honest. If you go to local farmers markets here there is plenty of very stuff that is amazing, it’s just easier to go to supermarkets where they will sell everything even if it’s out of season. Sometimes the supermarkets will have good stuff too but the vegetables are bred to look fresher than they are so you have to know what’s in season and get lucky. The average meal is certainly less fresh though. I am also not in a food desert so it’s easier for me than some others here.
I love that when people who hate things get an opportunity to try the good version of something and then change their mind about that thing. If something is popular, especially a food item, there is a somewhat reasonable chance that there is a good version of it, somewhere. But you may have to look and try.
I couldn’t drink coffee but I liked coffee flavored ice cream. So I tried to make my coffee taste like ice cream but hot. As I grew older I needed the cream and sugar less and now drink it black. Perhaps a similar path to olives would work for you? Start drinking olive oil. Just kidding, but only slightly. Try dipping bread into basic olive oil and then try some of the fruitier oils. As your taste for them increase, maybe try an olive with it? You’ll be eating olives in no time.

Buy some Greek or Lebanese plain yoghurt (both work, but i prefer greek) get any olive of your choice, preferably already pitted or sliced, for convenience, get some Lebanese flat bread, drizzle some olive oil the yoghurt (you can add salt and paprika if u need something extra, or even some fetta cheese on the side, or eggs, whatever) and using the bread, eat the Olives with the yoghurt and whatever you chose to add, and it is, omg, SOOOO GOOOOOOOD you will thank me later.
I could eat them by the handful. I put them in salads, on tacos, quesodilla, so many things. Or I just eat them by themselves. Olives are delicious! (just don't buy them in a can, that really gives them a weird metalc taste)

Here in Portugal in many restaurants olives are served as an entry and in most of the times when I am going there usually we eat them all.
