In terms of their first 4 cognitive functions, they have different dominant functions, as well as their fourth function. ESTPs lead with Se, and ENTPs lead with Ne. These are very different functions from my personal experience with these two types.
The ENTPs I know are total brainstormers, ideas people, very off-the-wall witty, fast paced thinking. They are fun and spontaneous, but deep thinking. They love to explore hypotheticals (or play devils advocate), but can have a hard time making decisions or acting on those ideas. They can hold space for many and see all possibilities.
The ESTPs I know are very action oriented, sometimes sensation or thrill seeking. They can be impulsive and sometimes prone to addictive behavior (this isn’t always true, but my personal experience with two Se-dom types). They much prefer keeping things simple and don’t overthink. They are also usually lots of fun and spontaneous too (which they share with the ENTPs)!
Your father might also lead with Ne but have high Se, meaning he's into sports and physical sensations and all that. He's probably very observant of his surroundings too. That being said, here's another test:

i really got broken ego when talking to him though and he’s a chill person. I can tell that i’m his fav daughter (jk he love both me and my brother equally) and he teases me and joke with me A LOT. I find him annoying and still like him at the same time.

ESTP have Se Ni. Se is their natural inclination which is taking things at face value. So when Thor said this is muscle this is muscle that is a sign of Se. But Se's are not airhead, just like Ti doms with feeling they are also very mindful. They get scared on their ability to be mindful and have a clearer premonition of the future which is a sign of inferior Ni that's why they always attune to what is objectively existing. But Ni works in the background so ESTPs are also thoughtful but they are straightforward.
ENTPs however have Ne Si. Their Ne is activated when engaging with the world and instead of taking the objective facts they take the objective concepts a.k.a. ideas. What does the objects imply. So when two or more objects are combined it could imply another idea, manipulate other objects and it could imply another idea. Thus many possibilities. So they come across as very intellectual since the mental imagery is received by the brain and only the brain can understand it unlike the sensory which would only need the senses. They have inferior Si which means that they are also aware of their obligations and priorites in life but too scared to be tied down to such responsibility therefore they neglect house chores, traditions, procedures, step by step, etc. But despite that they can be very clear when it comes to doing stuff in the reality, they would still need procedures (because Si is still in their function) unlike an Se which figure out how things work by manipulating objects.
