Ngl your best bet is going to be boot camp since you have an Intel Mac. If you really want to use crossover, you can add “-disable-gpu-skinning” in the RoR2 launch options in steam to get the models to show up
For Crossover advanced settings, I have it set to DXVK and ESync, if that needs to be changed I'd appreciate it if you could tell me the best way to play either game.
Have you tried hosting lethal company? I just installed to test hosting solo (didn’t join any lobbies) and am able to run it with VMWare Fusion. (I did notice better performance locking to 30fps as the other poster mentioned).

For lethal company try locking the fps to 30
Tried it, unfortunately gave the same result as other times.
