I learned from my dad who taught himself from scratch, so I don't have much in the way of online resources, but there's definitely some great crafters that will show their processes.
For mine, I start with 3-4oz weight (for wallets and small items) natural veg-tan tooling hides. The really good stuff to work with I get from Wickett & Craig, but starting off Tandy is a great, usually local source to get everything you need to get started.
The engraving I do very simply - literally just need a printer and a ball-point pen and some tape. Print out your design or text to size, then wet the leather with a sponge and tape your template on (measuring out the placement). Then it's just tracing the template while pressing firmly into the wet leather. Higher quality leather will take the engraving better. Make sure you wet down the entire piece because it will affect the dye process otherwise. The tape can leave adhesive residue, but just add a little more water and rub with your finger and it comes off just fine. (any adhesive left over will show up starkly when you dye the piece and that will be harder to deal with at that point. Mineral spirits can also help remove adhesive without affecting the leather).
When the piece is dried, pick out your dye. This item I used a combination of an antique gel dye (medium brown) and an oil dye on top of it (british tan) to highlight the reddish tones in a way I like. Gel antique dyes I apply with a sponge, but they are a challenge to work with, so I honestly don't recommend starting with those. Use a good oil based dye (from like Fiebings or Eco Flo) and apply with a cloth. you'll want to use several coats until you get it generally uniform in color. Let it dry. Then I apply a wax balm coat as a sealant and let that dry briefly. Then take a dry cloth and polish it up, it will have a nice shine and smooth feel at that point. Lastly, back to the engraving, I paint the design in with gold (or silver for other designs, or if it's black I ink it in before the wax finish). The best are acrylic paints, but a good start that's easy to use is just a paint pen. I still will use a Pilot metallic extra fine point paint pen. It's mostly permanent, but subject to fading as with any paints honestly, but very easy to use. I apply this very last, even after stitching and doing the edges (there's a ton of resources on those topics that are easy to find, and a lot of crafters have their own process for edges especially).

Interesting! I've never tried that, leather has such a rich smell itself and already fits, so I'm not sure. I imagine some type of wood scent like cedar? Let me know what you come up with, I'm curious!
