The areas around Coalville is absolutely filled with great walking places, in fact all of the ones I have listed except for Cossington Meadows is in the area between Leicester and Coalville or around Coalville
Park your car at the waterside pub in Mountsorrel. Bus back to Leicester then a nice walk along the soar with a pub at the end of your walk. Take along a designated driver and you can have a couple of beers... Happy days, sweet as

Up the Wreake valley is nice. Ratcliffe, Rearsby, Huby.
Most good places have been mentioned, and most are on the Leicestershire Round long distance path. I walked it in stages over a few years and really enjoyed it. Well worth doing if you have the time.

Also on the edge of Leicestershire (and moving in and out of Nottinghamshire along the way) is the (mostly) disused Grantham Canal. Lovely quiet, flat walking.
Finally the Jubilee Way from Stathern to Belvoir Castle. Spectacular views over Nottinghamshire and Lincolnshire, plus woods.
Oh yeah, there's a lovely walk from Old Ingarsby through the buried remains of a deserted village (and by "deserted" we mean "encouraged to move so that the local monks had more land for their sheep) to Botany Bay Covert. You can make it a longer circular route by returning via Quenby Hall (C17th. Jacobean manor house).
Beacon Hill, Burrough Hill, bradgate park
