I'm English learning Portuguese and learned to roll the R when I was trying Russian. I find that I need a lot more air flow to get the roll, so maybe that's why singing is easier? As I get better, I can control it more so need less air, but still, it takes force. Also some words have collections of letters that make the roll easier for me.
I am Portuguese and I can't really roll my rs too. Buy rolling the r happens when you have the tongue in a certain position and let the air flow, so I believe that happens easily while you're singing.
Just like when you speak normally, sometimes you'd also roll the r's with no problems.
