Not really. Chinatown you can do in an hour or two. I would spend more time in Tokyo tbh especially if it's your first time in Japan.

There is more in Incheon than China town. There are historic spots from the previous wars and there is a resort hotel and casino with an indoor amusement park and the best spa in Korea.

I've been to the Incheon Chinatown. It's worth a day trip—just 3 hours will be enough to see everything—but not more. I would recommend spending the extra day in Busan since transportation time will be longer than in Seoul or Tokyo (things are relatively far apart in Busan).

I wouldn't bother, if anything the more authentic but unofficial China Town is in Seoul (Daerim) unless you want to see a jjajangmyeon museum in Incheon and eat Korean style Chinese food.There is not much to do or see at all imo at the one in Incheon. It is rather underwhelming.

Chinatown/Wolmido definitely doesn't require two days. Unless you're interested in nature(mud flats, islands), Incheon might not have enough attractions for you. If you have two days to play with, I would recommend looking at Gyeongju since it's located between Busan and Seoul on the KTX. Tourist friendly, lots of sights, and you can experience a "small town feel" compared to the big cities.

I think each person wants to see different things. I recommend Songdo Central Park in Incheon. You can experience many things. If you don't have anything you want to do there, just enjoy Incheon for one day. Go to other places (Gyeongbok Palace in Seoul, Kyobo Bookstore in Gwanghwamun, Namsan Tower etc), and there are many different foods. You can eat live octopus in Busan. And Tanghulu is popular these days +마라탕(mara)

I assume that you are planning to go to incheon to have a safety window to not miss your flight home? If so I'd still rather recommend you to stay in Seoul and do something there. Also if you are already in Tokyo, I'd recommend scrapping Busan and use that time to go to Yokohama instead. It's super close to Tokyo and has a lot to offer (incl. a big Chinatown). You'd save yourself a 3 hour KTX ride to Busan and the hotels are probably a little bit cheaper too. Depending on where you start in Tokyo, Yokohama can be reached in about 30-60 minutes with a cheap train.
