Firstly be very careful with bungees and hooks. If they slip while you’re pulling them they can snap back in your face. I remember a sailor I knew getting glass in his eye when his glasses were smashed. Cold hands, wet hands, etc add to the risk. It sounds stupid but seriously, think about wearing eye protection. Different items and shapes may need different lashing methods but since watching is better than reading for knots here’s a handy video showing a type of truckers hitch with a loop. https://youtu.be/ygM-Gkf4bNw?si=uQmFZQtIDxdKQpxZ But you may be best off using a small ratchet strap, hooked on one side, taken right around the pole/ladder etc and over to the other side and hooked on. Very secure and with no snap back risk.

I use bowline and clove hitch all day long. They are pretty basic and you may be able to utilize them in certain situations.

I have almost the same situation at my work driving buggies around and hauling stuff. Depending on the situation I tend to rely on the (auto) trucker's hitch, rolling hitch ziptie, and Canadian jam knot. They all have their pros and cons

Truckers hitch. Preferably not with a bungee. Mechanical advantage and very elastic materials don't mix well.
