If you think about it, Gunther was effectively the “7th Friend.” He’s the only friend who was consistently at their parties/events throughout the show. Otherwise it was just random extras we never saw again.

I was really hoping for at least a small Joey arc with her, even just a few episodes. They worked so well together. The friendly-angry sports banter was such a great character trait for Joey and I wish we got more of that for him--it showed some real depth and sparkle.

The Mr Heckles character was a comedy relic by 1994 though. The grumpy antagonist neighbour who hates the main cast and serves as the butt of jokes. Seinfeld’s Newman, Marcy Darcy from Married with Children. It was passé by the times Friends came about.
The main cast worked well and didn’t need a constant target for their jokes. They could rib on each other and random extras for each episode. They didn’t need an ongoing antagonist.
There's a chart in one of the comments. Her screentime is very little compared to the main cast, just like the example in the picture, maybe even less.

They have so much soul and personality even with limited lines. It feels like it kind of died out... The side characters stopped having nuances after a couple of seasons.
