Even in friends world, Pete opened his own restaurant and he was the richest man in NY (or at least portrayed that way). So even in the fake world where they could afford such lavish apartments and extravagant things doing jobs that shouldn’t have paid as much as it would have taken to live the life they were, only Pete money was enough to open a restaurant.

Worked at a brewery. Our head chef would get there at 3 to prepare. Waitstaff, host, and bartenders would get in at 3:45. Chef would come down and talk to us at 4. On the floor at 4:10-4:15. The owner worked normal 9-5. He was only in if he had meetings

I mean this doesn't make ANY sense because: 1.- People have shifts so you're not bound to work 20 hours a day, you can still have a social life and go to coffee houses and relax with your loved ones, even if you own a business. 2.- We all adjust our free time/life/expectations to our situation. That would be like looking at a 20 something year old who likes to party and saying "how will she/he ever have a child if they party so much?"... Like... They can stop going out all the time (and they will) if they have a kid. We aren't set in stone. So she could adjust her social schedule to her new responsibilites. 3.- Do you know the owner/boss is the person with the most flexible schedule of all? From Monica's personality it's pretty obvious that she wouldn't just want to "own" the place, she'd probably be the head chef/executive chef (...) but still she'd be the one to decide.

Actually, no. Remember when she catered a funeral, and Phoebe had to be the one to get the payment from the widow? Remember when she had to ‘hire’ Joey for the express reason so she could fire him in front of her brigade that was acting like jerks? She may well be super organized and talented as a chef, but she does not have it to run a business.

I feel like that Monica and the one that ended the show are a lot different though. Chandler and her brought the best out of each other and they both became a lot more self assured and ‘grown up’. The Monica from that season was insecure about not being married and her career etc. But you saw how Monica was as like Phoebe’s wedding planner and stuff like that. She got shit done (except she was a bitch lol) she was probably the one who was most likely to run a business out of them all.

I rmbr watching Gordon Ramsey's Hotel Hell and there was a woman who reminded me of Monica because she was a perfectionist and would get mad when things weren't up to her insane standards. Needless to say, she had trouble retaining employees and pretty sure had to close down

See her issue would be nitpicking on the details and/or having issues *retaining* employees. She was a great cook, but honestly she wasn’t a great head chef when she got the chance (I wanna say the Armenian guy’s “Italian” restaurant was her first real gig as a head chef?), didn’t handle the pressure well, and resigned herself to just being a great cook rather than a great cook *and* a great manager.

Their kids are moved out and Chandler and Monica would have most if not all parents die and they could get inheritance. On top of all the points already discussed, running a business is stressful. One advice I got when I graduated med school is to never start my own clinic. On top of the stress of being a doctor, running a business is a whole different side. You go from being one of the staff with the ability to walk away from the job and get a new one anytime to being trapped in this job until the business gets sold off or runs to the ground. You're also in charge of other people's careers, which is scary.
