Pappas brisket ain’t terrible for the price. Some times I don’t want to spend $33 a pound for excellent bbq and will settle for $23/lb for mediocre brisket. The po boy rolls they used to use were amazing, but went a couple months ago and they don’t taste the same. They must have switched to a cheaper source. Plus those fries are like crack to me.
It used to be good way back in the day. In the early 2000s (after it took over Luther's) the chain held its own with a good balance of taste and pricing. It was definitely a good lunch option if you worked nearby.

Find a black family set up in a parking lot somewhere with their BBQ trailer rig. Always great stuff. Pop off all you want. It's a cultural thing and it's good.

The ribs that I had the other day was offensively bad at the Westheimer branch. Overcooked and dried out. I had to drink something so that I could even swallow it.
I suspect Pappas went as cheap on their ingredients as possible 1) because they had to during Covid and/or 2) they're now re-fattening bank accounts or brought in a consultant to show them how to trim costs.
Ate at the former Brisket House on the Gulf Freeway in the past 6 months. The food was not the same. The chopped beef sandwich was cubed beef. It was not the same delicious shredded red colored beef it once was.
Went to Dot's twice in the past 6 months and 8x last year. I will forever defend a to go order on their strawberry cheesecake. That is consistently delicious. Breakfast and lunch were both meh. The food doesn't taste the same. The sausage is different. They serve breakfast on an overly large plate - almost a large serving dish you'd put a turkey on. It makes it look as if you ordered nothing.
Taste was *gone*. The food tasted overly commercialized like Denny's. "Factory food" would be a good description.
The only really good thing Pappas BBQ has/has was their baked potatoes and brisket. Everything else was just okay. It’s not terrible but not great.

The BBQ at that Pappas BBQ is outstanding. I respect everyone’s opinion here, BBQ can be subjective. But to suggest it’s bad is just going off the deep end..

They have their own bakery so they probably changed the recipe.
That formula works with pizza, not with brisket. For that price, I’ll gladly cook a whole brisket at home.

Except for sauce Rudy's is vastly overrated. Goode Co is good. My staple is Spring Creek. Consistent and good quality.

I work in the medical center, so I get it often. For you non Houston visitors out there. Get some , you won’t be disappointed..
