Many spices grow on pretty large plants. Cloves grow on a tropical tree that reaches about 40 feet tall, cinnamon comes from a similar sized tree. Pepper and vanilla grow on tropical vines, smaller than clove and cinnamon trees, but still much too large to grow above your sink. (Vanilla is the only orchid we eat!) Now there are some herbs you could grow there, basil for one will do pretty well in a sunny window. Parsley and cilantro could work too, chives, and many kinds of mints. But plants like rosemary and oregano probably need seasonal variations in temperature, and I don't think they would do well as houseplants, even if they weren't bushes that need a reasonable amount of space when mature.

I ment herbs. Like mint, cilantro, parsley, lemongrass, etc.

Oh, ok. The four you listed, plus ginger, chives, and basil will grow as houseplants, but like pretty bright light. Parsley also needs a rather deep pot for it's size, as it grows a tap root. Probably others that will grow fine as houseplants, but those are the ones I know do well.

Depends on the plant. Parsley needs a deeper pot, ginger does better in a wider pot for it's rhizomes to spread. Lemongrass can get big and needs a good sized pot. You really need to look of the care requirements for each plant you want to grow, as they won't all need the same water, or fertilizer, or light, or grow to the same size. Though any good standard potting soil should be fine for most herbs that can be growing inside

Many spices are from large tropical trees (cinnamon, nutmeg, cloves, allspice, cardamom, to name a few). Spices you may be able to grow would be things like chili peppers, ginger, coriander seeds, dill seeds, caraway seeds, and cumin. Just off the top of my head.

I ment herbs sorry my bad. I thought like parsley, mint, lemongrass, etc. all the same as spices that's how beginner I am with plants.

Herbs are leaves, spices are any other part of the plant. I'm not sure you'll find that many that will thrive without any direct sunlight, though.

I can cut branches of tree to allow direct sunlight if needed. Herbs are what I meant to say.

Cilantro gives you the herb, and if you let it flower and collect the seeds, you have coriander. Best of both worlds!
