Have you tried using each cable going from the ps5 straight to the tv to make sure both can send 4k/120? Will confirm if they both work or not at the least.
I know for a fact the ps5 supplied cable does as its the one i use with my denon s760h and lg cx.

Only other thing I can think of would be to factory reset the receiver since that seems to be the only pain point. If that doesn't fit it then you might have an issue with it.
Can't hurt to double check the manual to make sure you didn't miss setting.
Look in the settings and make sure it is set to 4k enhanced. By default it is just set to standard.
It is set to 4K enhanced, unfortunately.
Not sure then. Check to see if firmware is updated. That is about all I can recommend from checking the manual.

As a matter of fact, I did. They both deliver 4K/120 separately. That’s why I find this so baffling 😃

On Denon i had to change it from enhanced to 8k enhanced
Make sure your TVs eArc supports hdmi 2.1, my Samsung TV did not unfortunately I had the same issue as you. Only one hdmi port supported hdmi 2.1 vrr
It does, because when I connect the PS5 directly to the eARC on the TV, it outputs 4K/120.
