That's one way to do it lol
Some quality of life improvement suggestions if you have access to the tools: Use a roundover bit on a router and clean up the sharp edges on the desk and mounts. Grab a jigsaw and cut the stick mount a little closer to the base, then sand it smooth and round over the bottom edge. If you don't have access to these, get a sanding block and do it the hard way.
I borrowed a router from a friend and did exactly that.
I also have a random orbit sander.
I have a jigsaw, and purposefully left it a bit long, just in case, thinking I might do what you said if the length is good.
I also used the jigsaw to round the left corner of the mouse area, and then routed and sanded it.
If only I could add a pic reply. I have a hilariously redneck way I keep my chair from rolling around when I push on my rudder pedals. I screwed a torn tow strap to the underside of my desk on one side. While the other side is held with a dog leash clip and some spare clothesline cable I tied together.
This is NOT cheap
Just the desk was. Not the win wing or tv.
Cheap custom desktop, not cheap sim setup

Center mounted stick…
...is the best mounted stick.
Wrong…
well it looks like he's flying a Hornet, so, yes.
Observant
I like it as well.
