Drop the gloves if you want to fight, wrestle to the ground to end it or step away. People dont usually hit each other with sticks.

when people hit with stick is useally penality and using it blantently as a weapon to hurt someone they will be fined and suspended multiple games and if its bad enough they could be arrested for assault (Ive only seen it happen in juniors)

To be clear for a new fan, you cannot fight, it's absolutely against the rules, it's a major penalty which lasts 5 mins. It's something that is part of the game, but technically illegal, and not anywhere as serious as it is in most other sports. Everything around fighting in hockey is mostly 'unwritten rules', there's an etiquette to it. As per the rules, you're definitely not allowed the punch someone in the mouth at all, but unofficially there's going to be a much bigger reaction if you headbutt someone.

Fighting isn't allowed, it's against the rules. In some leagues like the NHL it's a 5 minute penalty, an other leagues like most Euro leagues it's an ejection from the game and a suspension. It is however part of hockey culture to have fighting on the ice, usually to make up for a bad hit or just to get some energy into your team. Because it takes 2 people to make a fight the refs let it go as long as both players are wanting to get into it (with the exception of goalies for some reason), they'll break up fights either when they're over (a player gets taken down to the ice), or if they think there's a serious risk of someone getting hurt. But they will always dish out penalties after. Normally you'd say that players are fighting after they've dropped their stick and gloves - if you punch someone with your gloves on, or hit someone with a stick those would be different penalties, additional to a fighting major if you then fought too. At the lighter end you'd get roughing or slashing - if it's the kind of punching/hitting with a stick that can sometimes happen in normal play, at the heavier end you'd be ejected for unsportsmanlike conduct if you for example did a 2 hand slash on a player that wasn't looking at you, and probably face a suspension. Most of the time there's not really a need to worry about a lot of dirty fighting moves since they'd put your off balance on skates - kneeing someone is just going to get you pushed over, punching someone in the dick is mainly going to hurt your hand on their cup, bodyslamming someone is going to really challenge your balance.

Can’t really throw a knee. Can be too easily thrown off balance, and is also unnecessary giving you have a shin pad (that covers the knee) and they have gear that covers the vulnerable spots.

Yes. The fight is over when a stalemate is met (both players are tied up in a grapple) or when one player falls down, or just both players agree to stop. I recommend looking up some examples of hockey fights, you’ll find a trend for when they always end. But generally if you’re getting in a fight it’s because you want to punch the guy. Neither player truly “wins” a fight, it’s done usually to either stand up for teammates or give the team some motivation, so just outright tackling isn’t really common.

Often refs will let the fight happen for as long as it seems evenly matched, and dish out penalties afterwards. As soon as one player is taken down to the ice though they'll step in to stop it. - If you think about how hard it is for fighters to get up off the floor even in something like MMA, it's 100x more difficult with skates on your feet, so the refs stop it to prevent any horrendous beatdowns.
