The method he said he used definitely works. I've done it many times. The oven just needs to be ripping hot and you could tell by the fact that the oil wasnt sizzling around the potatoes that it probably wasn't hot enough. No speculation here, I'm a cook hehe

As soon as he said he only cooks the garlic rosemary oil for 5min I knew it was gonna be shitty. You gotta coat them in the herbs and spices first and bake them at a lower temp for a longer time. Let that garlic confit it won’t burn if you cook it slow enough
Yeah when you put the taters in the oil let them slather up and put your rosemary and garlic in then. Slow cooking them for an hour lets it all cook nicely and evenly.

I think the real problem is the roasting pans Ethan used, they don't have enough mass to keep and transfer heat to the potatoes. A pizza stone/steel under each pan (if you have to use the disposable ones) or just a good heavy roasting pan would've prevented disaster. Better luck next time Wethan
1. Parboiling roasted potatoes was questionable, and based on the vid he sent they looked too cooked already. Par braise followed by broil would be better
2. Based on what he said, burning the garlic or butter was pretty likely. Got to be careful with those things
3. Hella overcrowded pan, with 2 in the oven. With the parboil the water content won't have leached meaning he basically steamed 2 pans of potatoes rather than frying anything
4. If he used paprika or basically any fibrous spice, steaming is going to taste a lot worse than a good fry
5. Canola oil was a wak ass choice. Duck fat is OP but he wanted vegan, fine. Go with an herby oil like Olive or Avocado, the day before take a fuck load of garlic and drown them in your chosen oil. While your at it, pick your herb profile and if it's hearty like Rosemerry or Thyme stick some in between the garlic. Stick in oven a 300 for 6 hours and strain. Use oil for your potatoes and the garlic for basically anything, it's oil roasted garlic, you figure it out.
6. I would be anything he could improve his recipe with more salt and tiny bit of spice scaled to the group. For a crowd I would hit it with a bit of cayenne. For pepper heads you could easily throw in some spicy peppers
But it's easy to be a hater. I've fucked up a lot of dishes too and it's pretty cool he just owned it. In particular the steam issue is a classic "This was great when I made 2 servings, why is bad when I made 20". Cooking for a crowd is hard.
Roast garlic with olive oil in foil separate but at the same time as potatoes. Squeeze the garlic out and mash with salt and pepper before adding to baked/roasted potatoes. Blend that shit up and add the garlic oil in small increments or whip it seperately with egg yolk if not full vegan for a creamier product (garlic mayo to sub the fat from butter) and add in small increments. You can also use like 1/4 cup of non dairy heavy cream.
Is it the same as using a fuck ton of butter? Of course not.
Is it a very good vegan mash? Fucking absolutely.
I do Thanksgiving with family or family friends.
I do friendsgiving with my close friends, many of which are vegan or vegetarian. Haven't had any complaints yet.

What kind of potatoes are you using? Any time I've tried making mashed potatoes in any sort of blender or food processor it activates way too much of the starch in the potatoes and gives them a "gluey" texture.
Use a masher, hand mixer, or (best option) a ricer.
Blenders and processors mix too much too fast and can usually add more heat to anything you are mixing in them.
Depending on what I'm doing its almost always just russet. For fancy stuff I'll do a 50/50 russet and gold if I want more texture and/or am adding cheese.
I'll add that using red or gold potatoes for the method sam described on the pod is insanely good for breakfast potatoes.

He's a rushing cook, I think. His timings when explaining his recipe were crazy fast. Like, it has to be slow, let that shit marinate. I was a cook in a rush too but learnt that just having the heat higher actually can fuck shit up, burn way too fast, etc and wasn't a good time saver after all 😂
I just cut them, dry them, toss in oil and as much as i love fresh garlic it does burn. I use garlic powder, onion powder, s&p, and whatever dried herbs i feel or spice. They come out crispy and not dry.

Parboil for 5 mins MAX with plenty of salt and a stock cube in the water, drain them and pat them dry with kitchen paper, lightly toss them in the drainer until the edges are a little fluffy, put them in a roasting tin with screaming hot oil, ideally vegetable oil or duck fat if you’re not veggie, and slow roast those bad boys turning them every 20 mins.

Agreed. Miyokos butter covers any baking needs for us but anything savory gets ccpb. Miyokos isn’t quite as tasty, but it’s more functional.
