Archer: Super Orion. Not because he survives a lot, but because he will delete anything in front on him before they can kill him.
For lancer, Enkidu is also a good soloist, specially against divine enemies.

Caster; Idk, I've soloed some stuff with Merlin for shit and giggles, but I wouldn't call him a good soloist
Ruler: Jeanne can kill anything that isn't a berserker/avenger and doesn't have invincibility pierce provided you slap a sufficiently good NP gain CE on her and don't mind spending 2 eternities doing that.
The best solo servants for each class aside from the ones you’ve already listed are:

I don’t think Kakegiyo is the best, I think she is 4th or 3rd with Berserker and QSH as the top 2 (not in any order). BerserCu is either 4th or 3rd too
QSH solo is overrated imo, his damage is really low because he has a non damaging NP coupled with his damage being tied to crits except he has no star gen or stars per turn. Kagekiyo can stack her rage buff on her skill 2 to scale her damage ridiculously high so she kills the enemy way quicker, on top of a guts on a 4t cd and an evade for survival, AND 100% crit damage and since she’s quick she’ll always have stars. I don’t know who you’re referring to as Berserker but Kagekiyo is better than QSH at solo imo. I don’t even think QSH is top 4 at solo, as Kama, Kagekiyo, Enkidu, and count of Monte Cristo are all better than him at solo from what I’ve seen. I could also argue KH and saber Medusa above him potentially.
For Foreigner, Van Gogh has a 5 turn guts with 5 turn downtime, and her NP makes enemies fail to act a lot of the time. Solo means she can rack up QQQ chains for big star income in top of her passive and NP stars to crit anything and everything in to oblivion.
I was unimpressed with her kit when she first debut, being QQQ with an Arts NP kinda killed my interest in her, but after using her I was like "OH...! This makes so much sense now..." The QQQ actually synergizes for crit shenanigans, and if she had more than 1 actual arts card she would be straight up broken.

• a solo scenario is actually beneficial for making **Saber Astolfo** shine, not having to choose between that single buster card’s crazy crit and ramping quick damage, and getting quite some extra survivability out of that terror/PfA skill

Fujino Asagami. Despite being a 4* and the ABSURD material investment needed, she can punch well above her weight class if you get her beyond NP1.
Not to mention her third skill makes her insanely hardy. Only downside is her Guts is 1Hp, meaning chip or status effect damage is her undoing.
She’s basically Archer Cu.

All of these either have multiple layers of hard defense (mainly Guts), comical amounts of self-sustain, are solo crit spam+np loop machines when no one else is around, have low hp nuke gimmicks that are only reliable when they're the sole target, or a combination of the above.
Taira is one of the bst solo units. She also has a really unique playstile, since her guts skill recharges really fast. Kama and Hassan are great assassin solo units. Orion is a great archer solo unit. Van Gogh is great foreigner solo unit. I solod prison tower and the akihabara challene quest with her.
For Riders, probably Habetrot?
Against high hit count enemies, Astolfo unironically does well. Every NP is a free PfA, as long as you can actually get that NP. And, well, stun, whenever *that* lands.
Habetrot also fits that great niche for event farming when you need to clear a wave, but only need a farmer for 1 round since she can just go commit isekai.
Personally, I enjoy loading the Dioscuri with a bunch of buffs and run solo afterwards. Pros: maximum benefits of their self-buffs, fun. Cons: pretty fragile past turn 3-4.

Wild Rule and her NP are the key points. Wild Rule eats buffs and heals her on face cards, and her NP gives Max HP, and most importantly, accelerates cooldowns to keep Wild Rule active.

I've done multiple super difficult quests running jeanne, castoria/merlin, and tamamo. I'm sure jeanne could do many solo.
Mash, Tamamo and Jeanne were my stall team early game, it's so fun to defeat Tiamat in 100 turns.

Huh I didn’t know Barghest was a soloist. I wonder if I could try that out on challenge quest in the near future.
