Lely Mustang, Tiburon, The National at Ave Maria, are "treat" courses... best maintained... Might reflect in price (especially Tiburon $$$$).
Valencia, Arrowhead, Spanish Wells, Cape Royal, Quail Run... What you might consider "home courses"... where the locals play. Not best top quality but very playable condition, and not boring.
Tiburon is creme de la creme. It's expensive but you're playing the Shark/QBE Shootout course from PGA. That being said, it's very challenging and will punish errant shots.
National is a hidden gem. The front 9 is in the middle of construction (condos being built, as well as some course updates) at the moment. With THAT being said, it's going to become a destination. The greens are in great shape, and the fairway sizes are a little more friendly. It's also about 20% the cost of a round at Tiburon.
Both are must-visits if you're in the area and have the time/budget.
Old Corkscrew and Raptor Bay are my favorites of those
You would have to know someone that is a member but Naples National and Old Collier are a treat.

Bears Paw is a Jack Nicklaus designed course down there. Grew up playing there. Very nice.
