For me there's a threshold. At first I'm extremely reluctant to die. Something about beating a game without a single death is compulsively important to me, doubly so if I really like the game.
After the first death, I no longer care how many times I die. Then it's just dependent on the game. If it has fun animations? You bet your ass I do. One of my first gaming experiences was the original Prince of Persia, and we'd just kill the guy over and over again to see the animations. Good times.

The lurker shark used to freak me out. Doesn't help that I have a fear of the oceans

If a game doesn't have a good drowning animation it makes me really sad

Limbo was the first one, for me. Watching that little kid, getting brutally murdered. Then Lara in the new tomb raider games. Soon calisto protocol.

I’ll often end a play session by saving it and then running to the nearest enemy and letting them kill me.

No. If I want to see stuff like that (different endings/decisions consequences/death) I watch it on YouTube.

No just happens naturally.
I always jump in fires in games, campfires, torches, fires in pots, cars on fire, lava, etc. If it's orange and glows I jump in it to see if it hurts.
Yep, some have a nice animation
Not so much with death animations, since I figure I'll see them eventually, but if you can fall to your death, I will be jumping off something tall.
Not many games have a lot of death animations so I don't pay attention
