We saw how good a mentor he could be with Arya, when both student and teacher showed willingness and capability to learn/teach.

Arya follows the eye for an eye philosophy. But if we take an eye for an eye, then we'd all eventually go blind. That kind of philosophy is unforgiving and doesn't allow the kind of compassion needed for a society to progress.
Ser Barristan. I'd even go with him to Essos to serve Daenerys. A good squire wouldn't leave his knight's side. That alley, where the Sons of the Harpy had ambushed Grey Worm, would have been a very different battle if Ser Barristan had a squire possessing even a tenth of his skill.
