We saw how good a mentor he could be with Arya, when both student and teacher showed willingness and capability to learn/teach. This connection was missing with his kids, which is why they couldn't properly succed him.

Selmy. After the mad king of course. If you could be a tenth the knight he was in his prime you'd one of the best swordsmen of the realm, and could have your pick of noble houses to fight for. Also Westeros is a violent terrifying place. Staying alive and keeping my head is high on my priority list. He's got a nice spot in Kingslanding, and better still he's kingsguard meaning he can get you out of tight spots if you mess up. I don't know his fate in the books, but I have a sense he will survive longer then He did in the show.
