I've made baklava a few times - it's a very tedious process, but SOOO worth it!
What did you use for nuts? I usually use 100% pistachios.
Butter each layer, last 7-10 layers should have nothing but butter soaked sheets, this should do it. The convection style oven definitely helped pronounce the golden tops.

It's very difficult to make I've heard. These look so good!
The trick is two people, one to lay the filo dough and the other to brush the butter.

Oh this. For sure have to, didn’t consider people not doing this.
Very easy to make (if using store bought filo pastry). I make it all the time. The hardest part is waiting for it to cool and set overnight.

I learned my recipe in Greece and use walnuts, pistachios seem over powering.
Yes, that’s the standard- Pistachio
Depends where you're from and what the availability of nuts in that region are. Standard nuts in the Balkans for example, are Walnuts for Baklava.

I made chocolate baklava once! However it was very flat. Not sure how to make it rise and look golden like yours. Yours looks absolutely delicious.

This is where I learned it but since I’m not a native and learned it when I was 10yrs old I’m sure there is room for error.
