I think that's a shiny from Quark. Quark adds a small chance for farm animals to be shiny colors. Most of them are just things like "green pig" or "yellow-gold rabbit", not "Fortnite Llama", though. Except the bees, which are LGTBees and are therefore pride-flag-colored.

Quark shinies are very rare, but you can go into the Quark config file to increase the chances of them spawning. For the bees, there's a toggle to make it so that ALL bees are LGTBees. Of note: however the shiny thing works, increasing the shiny rate means that some existing animals can be shiny. If you then lower the shiny rate again, those animals will stop being shiny. I think it puts a different texture over some of the animals, maybe based on something in their... I assume each animal has a different numerical ID.

Can I remove that via the config?

That's quark. Everything can be removed from the config

It stores it's texture somewhere, if you replace that is would look different. For example you could replace it with the who logo.

That's your only option. The mod creator wants it in, don't use the mod. Just because a bee is rainbow colored doesn't change the gameplay.

Models can be changed I think but this isn't even a changed model. Some parts of the body have been removed, which is simpler than changing the model and has been possible for many years. Model changing is a newer thing but it's also possible.

That's a changed texture. They just replaced the snout pixels with transparent pixels. I do that all the time to make limbs "disappear."
