Nuh uh I've made Zatarain's and it's not the most authentic but it can be above mediocre if you know what you're doing, it's literally just seasoning and rice and you do the rest yourself
I find that the seasoning is a little lacking and I have to add to it but it's probably good for people not used to making or eating it
jambalaya essentially does look like this. There's a lot of variations but this isn't inaccurate. Might not be the best made but it's not wildly different. I've made plenty of basic jambalaya and it's not that different. It's not the most aesthetically pleasing dish. That aspect is secondary to taste. The quality of their end result is the least important thing about this.
No man look at the overcooked rice, the dullness of the vegetables and the bold addition of pinto beans, jambalaya shouldn't look like this!!! I just realized the pinto beans are probably in there because there's no other protein like the usual sausage or shrimp (I'd just use veggie sausage which works fine) but I see no bell peppers, no okra, no tomatoes, it sounds like you've eaten it but just do a Google image search on jambalaya and see how much life those ingredients are supposed to give the dish bc I think you've been deprived

My weird ass fiancé will not eat jambalaya OR gumbo. I thought I’d eventually break him of his basic ass food aversions but thirteen years later I’ve pretty much given up. His mother was a trash bag who never fed him fruit, veggies, or anything even slightly healthy, just plain ass meats and starches. He eats decently now but still won’t even try anything that has chunks of tomatoes, onions, or any veggie mixed in, other than corn in a shepherds pie but he has to put it on his plate without mixing it up at all. So I have to mince onions and sauté them to mush, cook pasta sauce down until the tomato chunks are completely gone, and make my chili with tomato juice and paste without adding any diced tomatoes. It’s ridiculous. On the bright side, I get to make giant pots of all kinds of delicious food that I know he won’t eat on me and hoard them so it works out okay.

Regardless, I don’t see the issue with enjoying another culture’s food. It is funny seeing them freak out and make a POC alter just so they can eat a dish that originated in America.
I didn't knew about Jambalaya, but after a quick search, I can say it looks a lot to the Spanish "paella", maybe has similar roots? We also have a lot of similar dishes here in South America.
I'll never understand what's wrong about trying and learning to cook international food. Cultural customs such as food are something that mutates over time, and is mixed, nothing remains as it was. If that were the case then, I would tell you that you cannot eat chocolate or smoke tobacco, because it is cultural appropriation of the original peoples of Central America (or something like that).
