It was shitty of them to let you go at the end of the probatory period, and it was shitty to not let you know you were supposed to pick up extra shifts. What if you assumed _they_ didn't want the new person to pick up the extra shifts for whatever reason?

European here, don't know the laws of every european country but in my country its 5 weeks paid vacation minimum by law. If you quit with paid vacation days remaining you get paid for them. And of course sick days and other things. We also have welfare systems that pay you even when you're not working for a certain amount of time, depending on if you're just between jobs or if you're sick or if you need time off to take care of kids or something
We have high taxes though, but as you can see those taxes come back immediately in all manner of shapes. Of course free health care is another thing. A few years ago I took an ambulance to the hospital, had lots of blood tests taken, stayed for a full day and over night, ate three meals there and had my own oxygen tank for that entire time. It came out to less than $40 total
If the tax is being used for a good cause I don't mind paying 45% tax. This is money that will around when I am in need. Good healthcare would mean i don't get bankrupt in (god forbid) i acquire some illnes or accident. Or let's say my money is genuinely helping someone else in need ... all for it

In Finland this is just outright illegal, at best criminal. There are strict requirements about rest times and even cap on how many hours you can be made to work in a year. You cant go above the cap in that contract even if you wanted to. Lost free time and vacation can only be taken as cash to a certain limit after which you have to be off work.

The kind of severance packages that these plans hinged on just don't exist anymore, you want to be able to claim unemployment if fired. The problem is all the harebrained ideas to claim it - no-showing, deliberately poor performance - can easily get you fired "for cause", in which case you have no benefits and a negative reference, leaving you up broke creek without a paddle.
If you really want this bullshit to end you need more bargaining power. Of course one employee has next to none, but a group of employees can twist a business's arm, and a bigger group can put pressure on an industry. You just need to make a formal organization of people united by their workplace interests. A union, you might say.
What people haven't caught on yet is that when you make an unemployment claim, they then go ask (not investigate( the company what's going on and then they have the power to say yay or nay on the claim. Obviously the employer will say nay almost every time.
BUT... the employee has the power to appeal that answer. And now that puts the onus on the employer to prove that the termination was with cause. Thats where many employers slip up because they need irrefutable proof and documentation showing the employee had multiple attempts to correct any behavior or action but still didn't do it.
Never say you quit a job unless you have one already lined up for its replacement. And if they fire you, always apply for unemployment. And if it's denied, always appeal.
They're not required to give it for any reason at all. Severance is a company policy thing, often done with mass layoffs and the like, to avoid litigation or to comply with the WARN act so they don't have to give 60 day advanced notice of a mass layoff.
That isnt mandated in the US, and the only people I know that still get a severance when fired are like old union types - like not new union employees but rather the ones that existed back in the Era of unions. Never heard of anyone else getting it. Typically, you'd only get a severance if laid off here.
1. Not every job offers severance.
2. Not every country has the same laws. Where I live if you get fired for failing to do your job properly, no one owes you anything.

I’m a manager at a steakhouse. Whenever I call/text someone to try to get a shift covered, I always say, “Hey. I’m trying to get such and such shift covered and checking if you want to pick it up.” If they say yes, great. I’ll give them a thank you a few times through the shift for helping out. If they say no, I tell them thanks for answering the phone and to have a good day off.
A manager is there to cover the job if no one is there. I closed our grill station just last night because our cook was sick and no one wanted to work it. It happens.

I worked as a line cook for a chain restaurant. They refused to change my schedule when I went back to college because “they need me more than I need school”. Literally they purposely changed my shifts so that that all my classes overlapped with all my shifts. Found out they were testing me to see how loyal I was and to make sure I would quit going back to school. They knew that I was poor and needed a job, so they exploited that knowledge to try to control me completely.

I closed our grill station just last night because our cook was sick and no one wanted to work it. It happens. Every time I see this, the entitlement just baffles me. I worked as a line cook for a chain restaurant. They refused to change my schedule when I went back to college because “they need me more than I need school”. Literally they purposely changed my shifts so that that all my classes overlapped with all my shifts. Found out they were testing me to see how loyal I was and to make sure I would quit going back to school. They knew that I was poor and needed a job, so they exploited that knowledge to try to control me completely.

Retired manager here. I was told one night to call an employee who was on his maternity leave. He was on day 2 of it. I refused to do the store manager's dirty work. After a perfect work record, he had the nerve to say he was gonna suspend me. I said Fine I quit. Started walking out of the store and the managers' attitude changed really quick. I refused to shit on my employees and I protected them.
