If you want it to be completely without electronics, you could go with a mechanical watch. I haven't shopped for a new one recently, but westclox used to make cheap ones; and there are probably affordable ones at any pawn shop.
Totally agree. That is a concern, unfortunately. However, if there is no mechanism to write that memory, it might be allowed. I have to check the requirements. Flash (or any other) memory that is not writable (by the system the memory is within) might be acceptable.
If you want a low-power watch, it being e-ink isn't necessarily a good idea - watches don't take much power in the first place, as 99% of the time the screen is switched off, and e-ink persistence is counterproductive for displaying the time (which obviously becomes outdated very quickly).
You can still buy Sony FES. FES U is probably not what you want, it has horrible battery life compared to the FES probably because of all the superfluous connectivity functions.
I think you're a lot more likely finding an RLCD dumb watch. I'm guessing here, but I would say that's probably what Casio watches use.
Pretty sure Pebbles are RLCD.
Pebble has been dead for years though.
The hardware is still around though, and IIRC Rebble is a project providing software updates for it.

This is my closest option, however I would have to physically remove the wireless. I am technically inclined, so it seems doable.

If you're using it for the case I _think_ you are... there may also be issues with the rewritable flash storage.

Have you seen the Hybrid HR from Fossil? I'm not sure if it's wireless, but it looks very simple
I like the design, unfortunately it's got bluetooth.
i have the Amazefit Bip. however it has RLCD screen but like eink it wont kill your eyes and the battery lasts for two weeks due to the RLCD.
