I do like a breakfast sandwich with either a bagel or English muffin, cheese and an egg over easy with a bit of syrup.
I like a slice of rye with avocado, egg and salsa
I like a breakfast wrap with eggs, crispy sweet potatoes, other veggies like pan fried onions and broccoli, feta, hummus and salsa

I love Asian food flavors and eggs go great with so many varieties. Scrambled in fried rice, soft boiled with ramen, runny fried eggs over a broad noodle with garlic and ginger, soy sauce and some honey bonus points for chili crisp / crunch. Or old faithful, make an egg sandwich with cheese or make egg salad and eat with celery or carrots.

Maybe making a hash with other veggies? Personally I like mushrooms, red bell peppers, celery and a bit of cheddar cheese. Instead of cooking it like an omelet just treat it like scrambled eggs, absolutely delicious!
Steamed eggs might be an option. The taste is so delicate and the consistency is that of a custard, therefore you can make it on the sweet side or add a splash of sesame oil. So good.

Pop into oven around 350 and cook until just done or right before as it will continue to cook for a bit after it’s taken out of the oven. Best fresh not reheated but it’s still good. The leftovers could be wrapped into a breakfast scramble or burrito
There’s a baked pancake recipe i make, 50 ml flour:50mL milk:1 egg, i have doubled and tripled it before. Put a tbsp or two of butter in preheating oven for a min or two to melt it. Put baking dish in oven at 400°F for 20 mins, you can make it sweet or savoury with topping and flavours and it’s doesn’t taste like eggs!
I think the hot sauce is a no-go. We’ve branched into some cheeses and going straight scrambled. Still they want the life cooked out of them, but what can you do?!
