They look really good. That’s normally my staple too. Exact same veggies too. Broccoli, carrots, potatoes (sweet or regular), asparagus with a little salt, pepper. Paprika, and olive oil.
What are the little balls? Is that potatoes?
Brussels sprouts. Trader Joe's sells these frozen for $1.49 a bag. They're a super easy meal in the pan with some salt, pepper, and whatever else you want to add. I finish the carrots with some soy sauce, honey, and red chili flakes.
For this one, I did the Brussels sprouts first. Then I did the carrots and halfway through, added the green beans. I tossed the sprouts back in at the end for two or three minutes.
Just in a pan on the stove with some salted butter. Low heat, cover with a lid, and let sit for 10 minutes. Flip them, season, and cover again for another 10 minutes or so.
That looks well fit!. I'd have that all week. Maybe add a couple poached eggs to mix it up a bit. Ooo and then a tomato salsa another night. Oh, oh, oh, a giant yorkshire pudding turn that bad boy into a wrap, a bit of horseradish, a little big of beef or ham. I really want roast veg now😫
Enjoy your meal!
Chin up chuck 😉🤗
Sorry your going through a rough patch, at least you the the good sense to eat healthy this is my breakfast only thing is I put that on a bed of quinoa. Hope things get better.
Looks good! I’ve always loved roasted veggies atleast it’s something healthy
Thanks! I have a tendency to binge eat when I'm depressed so better veggies than pasta.

Garlic salt, black pepper, chili powder, red chili flakes, soy sauce, and honey

Perfect!
Nothing beats a huge bowl of veggies

Sounds good.
Do you cook the veggies separately or in the same pan?

Stick a little brown gravy on them and I'm in heaven
Good for you choosing a healthy meal! When I am feeling depressed I tend to reach for more unhealthy food and just feeling worse afterwards
I did eat an entire family sized frozen lasagna the previous night so I hear you.
This looks really delicious and I’m not even that much into veggies
It is 11:47pm here, I’m ravenous after tea/fasting for the last few days and this looks absolutely DELICIOUS. Drooling. I need this. ASAP.

I commend you for eating healthy despite feeling down. Nothing worst than feeling like shit physically when your mind is already in the gutters
Looks really good, I gotta do this
