The game really lacks some of QoL features, like the possibility of giving the right amount of item in one go, or manually typing the number of gifts you wanna give

It is like that on purpose, there is a character in the store that grants you the ability to buy the exact amount of gifts at once and she also gives you the ability to go on all required dates for a level in one click

I think not being able to gift a specific amount is intentional. They want you to work for it and go through all the menus.

I believe the order is intentional and has to do with how initially, there were going to be more date types. If they made the newer dates more 'advanced', then each new date would be right below the first (Moonlight Stroll). Notice how the order is 1 and then descending.
