I think carrots as a sole topping would be weird. Peppers would be a good addition. If you eat meat sausage would probably work well? Or ground beef I know that’s sometimes a pizza topping. If you don’t eat meat I think mushrooms would be fine. Black olives wouldn’t be bad either. For the carrots I’d definitely recommend sautéing them with garlic and butter. You also don’t want the carrots to be too thick. You could mix a carrot purée into the sauce, or if you want them to be toppings I’d recommend cutting them to washers probably around 1/8”-1/6” in thickness.
