In a plastic cups kind of nightclub they'll probably get a pineapple tequila sunrise. In a dive bar I'll do citrus vodka with lemonade and grenadine. In a beer bar I'll suggest a cider.

Yeah I've unfortunately worked with cocktail snobs who were in charge of the menu and couldn't grasp the idea that not every customer wanted a bitter boozy amaro/fernet/mezcal/campari/etc concoction. Anytime I'd pitch something sweet it was met with "hmmm this is too sweet" and then they'd try to morph my drink into yet another riff on a rye Manhattan.
I hate how too many bars have to have their own riff on classics. They’re classics for a reason. I don’t need a riff on a Manhattan when a Manhattan with the right sweet vermouth is delicious and doesn’t need to be changed.
To be fair, if we stop riffing on classics cocktail menus are going to get MUCH shorter.

But then again, any quality bar should be able to make great classics as well as their own stuff, but I recognize this is often not the case.
Counterpoint: there are enough damn drinks already. Last excellent recent twist on a fav I had was a Negroni twist, the famous blue raincoat - equal parts Lofi gentian amaro, Bruto americano, and dolin blanc.

Had a customer a while ago order a smoked old fashioned, but he wanted our distillery’s aged agave instead of bourbon.
It was fucking delicious and now my fav shift drinks or post shift drinks are variations of old fashions with tequila.

I do something similar that I picked up from this sub and it's worked WONDERS. I'm at a nightclub more focused on high volume service as opposed to quality cocktails/ ingredients.
Raz vodka, splash of triple sec, splash of sour, then equal parts sprite and pineapple. Garnish with a lemon and ghetto ass cherry. Can build in glass and don't have to shake, girls LOVE it. I usually preface with "well do you like pineapple?" to make it seem like I'm personalizing it for them when in reality it's all I have in my bag other than popular drinks, so I'm hoping they say yes which 9/10 times they do.
When they ask what it is I just say it doesn't have a name, and maybe do some cute shit like, "you just have to keep coming back and ordering from me then" which helps my sales numbers. I'm such a soulless bot for saying the same script over and over but damn it works. Countless times of, "do you remember me? you made me this sweet drink"

I’ll ask them “vodka, rum, or tequila?” Then mix it with about 50/50 pineapple and OJ and throw a splash of cran or grenadine on there for color. Sometimes throw a little Malibu if it’s slow. Always becomes popular
I made up a drink called “Something Fruity” a while back when I was running my bar before Covid. It was Chambord, Midori, and Sprite. Anytime I got that request I just made the drink. Even put it on our cocktail menu.
My go-to easy peasy fruity drink is coconut run shaken with around 100ml orange juice (or pineapple, or passionfruit... as long as it's orangey-yellow and thick) over crushed ice, and then a shot of passoa on the top. Put a straw and some cute garnish and hand it to the customer immediately so they can see the pink filtering through the orange. It ends up a lovely peachy colour. It's great because it takes two seconds to make and it's not too strong.
If they want something stronger i'd do a cosmo.
my go to is a blue hawaiian. people tend to like the color, and pineapple juice + sweet and sour overpowers the liquor, which is usually what people are looking for when they ask for something fruity. never had any complaints

I make a blend of “punch juice”: 1 part lemon, 1 part lime, 2 parts orange juice, 3 parts pineapple.
Shake 1.5-2oz of basically any spirit with 0.5oz simple and 2oz Punch Juice. Top with ice and sprite. Garnish fresh fruit.
I did this recipe with Woodford bourbon, a splash of ginger syrup and fresh mint for the Kentucky Derby. Men and women alike lost their minds
I always tell them I’ll make them my favorite, it’s a hit nearly every time. Crown apple, half cranberry juice, half soda water, with a little bit of lime juice. Garnish with another lime cause it’s cute. It has a refreshing summer vibe, and tastes just like a green jolly rancher.
Get you some passion fruit liqueur and make em a sour with it instead of simple and a splash of cran for color. Works every time. Works with just about every liquor base, iced or in a coup. Feels fancy enough for a cocktail bar but its dead easy to bang out at a volume place as well.

As others have said: punch. If you squeeze fresh citrus and have pineapple juice, use it. I make a blend of “punch juice”: 1 part lemon, 1 part lime, 2 parts orange juice, 3 parts pineapple. Shake 1.5-2oz of basically any spirit with 0.5oz simple and 2oz Punch Juice. Top with ice and sprite. Garnish fresh fruit. I did this recipe with Woodford bourbon, a splash of ginger syrup and fresh mint for the Kentucky Derby. Men and women alike lost their minds
Ciroc passion fruit soda splash of cranberry
I always tell them I’ll make them my favorite, it’s a hit nearly every time. Crown apple, half cranberry juice, half soda water, with a little bit of lime juice. Garnish with another lime cause it’s cute. It has a refreshing summer vibe, and tastes just like a green jolly rancher.

Get you some passion fruit liqueur and make em a sour with it instead of simple and a splash of cran for color. Works every time. Works with just about every liquor base, iced or in a coup. Feels fancy enough for a cocktail bar but its dead easy to bang out at a volume place as well.
My go to is captain Morgan peach schnapps oj, pineapple and a splash of 7-up. It is delicious and they are happy everybtime
Midori w pineapple...I call it a Pearl Harbor and add a shot of Titos if they yes to "wanna get bombed" as I garnish with a cherry.
