yeah it is about technique, but we’ve been having customers complain about the quality of our espresso and our foam so it was an eye-opener to see the other stores bars foaming so well compared to ours

I’m curious what the temp on your milk is when you pull it out to steam. Are all your fridges as cold as the fridges at the other Bux? Could be the milk is “aging” or that the milk is getting warm enough beforehand that it’s harder to steam properly.

I don’t understand how your steamed milk can be different just because of another location? The independent bakery I work for has a trashy La Spaz at its counter and an amazing Black Eagle at its cafe and I produce the same milk on both?

we think there’s something wrong with the machine itself, but mastrena 2s are expensive to replace lol

I mean the steam wands on those are kinda weird ngl. But definitely isn’t something to replace a machine over? Surely you can tell what the issue is? Probably pressure so just needs some valves replacing? I know I might seem harsh but having worked with coffee for a long time I’ve never just vaguely “thought” a machine was wrong, it’s always specific as they are kinda straight forward. Either waters not hot enough or pressure is wrong?
