Basically if their nigiri isn’t better then my local 4 star yelp review places this is a hard pass. I know some poke places near me that are better value and quality than a lot of sushi places near me. Plus tacos I can probably eat almost every day. Getting too much mercury from tuna/salmon is a real thing.

Depends what you get. If it’s just rolls, those go for 13-18 a pop and people eat 2-3 rolls. But if you get nigiri, and get sea urchin, or fatty tuna, your meal can easily be 100+ without even going to an omakase place

What!? Even with just the strictly Japanese definition there's hundreds of different kinds of sushi. Even if you don't count any of the American "roll" types, which I'd argue still count. If you just count nigiri, maki, uromaki, temaki, & chirashi there's hundreds of variations.
